Right now is such a nice time with the kids. My 3 1/2 year old has grown up enough that I can have a conversation with her, she asks questions, wants to learn & help but still retains a cute innocence. My 18 month old is just starting to talk and hasn’t quite got to the tantrum stage yet although he has recently learnt the word ‘no’, so I’m sure it won’t be long! The weeks go by in a busy routine of nursery school drop offs and pick ups, play dates, classes & baby groups. The kids grow and eat…a lot! We seem to go through so much food. I go food shopping and three days later the fridge seems empty, how does that happen?
I am always looking for different ideas for lunch, they need to be quick & easy to prepare, healthy, tasty and something the kids will eat. This quesadilla ticks all the boxes! It also uses a lot of store cupboard foods so it can be one of those meals that can be prepared when the fridge is nearly bare.
For this recipe, I haven’t specified quantities as you can add as much or little of the ingredients as you want. Make 1, 2, 3 quesadillas or as many as the kids will eat. It’s the kind of meal where I will make a couple to share and then cook a few more if everyone is hungry. ‘ More’ is one of my little boy’s favourite words!
Avocado, Tuna, Sweetcorn & Cheddar Quesadilla
Ingredients:
Plain tortilla wraps
Avocado- ripe & cut into chunks
Canned sweetcorn
Canned Tuna, drained
Grated cheddar cheese
Method:
In a dry frying pan, lay a tortilla wrap. Fill half of it with the avocado, canned tuna & sweetcorn and sprinkle some cheddar cheese. You need enough cheese to melt and make the quesadilla stick together. Fold in half and cook on a medium heat for a few minutes until the tortilla wrap is slightly golden. Flip over and cook on the other side until golden. Cut into triangles and serve.
