This is more of an idea of something to make with the kids than a proper recipe. Pita pizzas are so easy and you can experiment with different toppings. I kept things simple here with mozzarella and homemade pesto.
Pitas make a surprisingly good cheat pizza bases and I find it’s nice having little individual pizzas. I like using the wholemeal ones for a slightly healthier version.
For my baby daughter, I just cut them in thin strips, which worked well as finger food.
Mozzarella and pesto pita pizzas
Makes 4 individual pizzas
Ingredients:
75g Mozzarella
Pesto (You could try this Nut-free pesto)
Method:
Spread a thin layer of tomato sauce evenly over the pita bread using the back of your spoon.
Arrange some torn pieces of mozzarella and dollops of pesto to taste.
Put the pizzas in the oven and cook until the cheese is bubbling and melted, 5-10 minutes.
